Mais ils accrochent la plupart du temps. Ceux qui changent d\u2019orientation \u00e0 l\u2019issue de la seconde sont \u00e0 la marge\u00a0\u00bb, d\u00e9taille Pierre Schouller. Les \u00e9l\u00e8ves suivent un tronc commun en seconde entre la salle et la cuisine. Ils alternent les cours une semaine sur deux. En fin d\u2019ann\u00e9e, ils doivent se d\u00e9cider pour l\u2019une ou l\u2019autre sp\u00e9cialit\u00e9.<\/p><p>\u00ab\u00a0Parfois, des jeunes changent d\u2019avis. Ils pensaient choisir la cuisine et vu leur aisance \u00e0 l\u2019oral, leur bonne m\u00e9moire, ils finissent par se diriger vers la salle. Mais les deux m\u00e9tiers fonctionnent ensemble, ajoute le directeur d\u00e9l\u00e9gu\u00e9.
